Don’t Over-Smoke: Stronger woods like Oak, Pecan, Hickory, and Bourbon-Soaked Oak release flavor quickly. Keep smoke time under 15 seconds to avoid bitterness.

Mesquite rule: Start with a shorter smoke (try 8–10 seconds)—it’s powerful and builds fast. Add time only if needed.

Refresh the Chips: If the wood turns completely black and ashy, scoop it out and add a fresh pinch. Burnt ash doesn’t taste good.

Experiment: Try mixing 50% Oak and 50% Cherry to create a custom blend that’s both smoky and sweet.
